Over drinks the other night, a friend of mine flipped his menu around, with a question for me. "What does `frenched' mean?" he asked with a smirk, pointing to the "Frenched Roasted Chicken" at the top of the list. The group at the table laughed about the romantic possibilities of such a technique, and collectively gave up. But it got me thinking.

Chicken can be a chameleon, lending its versatile, sturdy constitution as a base for all manners of preparation, and there are scads of tasty ways to use chicken. Given the braises and stews and stir fries, greasy rotisseries and fricassees, it's easy to forget about the glories of roasted chicken. A bird seasoned simply and roasted will deliver true chicken-ness.

But even there, the variations and creative possibilities are infinite.
