Tonight, sometime before the new year, Ralf Schmidt will plate the last dinner of the night at Chanterelle, the restaurant he opened 21 years ago in the Pearl District of Eugene.

Perhaps it will be one of his standards, like Steak Diane, or Veal Scallopini, or one of the 10 nightly specials. Then he'll take off his white double-breasted chef's coat, walk out of the tiny kitchen and turn his restaurant over to a new owner and a new chef.

Schmidt, 63, is ending a remarkable run at Chanterelle, the intimate, 14-table place that developed a reputation as one of Eugene's best restaurants - and was ranked the 37th best restaurant in the country in a 1994 survey by the readers of Conde Nast Traveler magazine.
