Chef paul liebrandt (Atlas, Papillon) is back in town, orchestrating exhilarating culinary concerts at Gilt, the elegant new occupant of half of the former Le Cirque 2000 space.
The name pays tribute to the Gilded Age of the late 19th century, when tycoons such as Henry Villard amassed great fortunes. The Villard Mansion, now part of the New York Palace Hotel, is one of the fruits of that period. Dating from 1882, its main dining room, with a massive marble fireplace and ornately carved woodwork, is now a 52-seat showcase for the freewheeling flavor formulations of Mr. Liebrandt.
