Over the past 15 years I've worked with just about every kind of recipe in an effort to moderate fat and calories. In 1990, I thought I had the answer and took fat - all the fat - out of my recipes.

My focus was too narrow to care about how that prepared recipe ended up looking or tasting. I concentrated exclusively on the results that registered on my scale.

As years went by, my view became less rigid. I concluded that if I could cut at least half a recipe's fat, significantly reduce calories in the process and maintain that recipe's integrity, I had accomplished something positive, useful and desirable.
