For decades, Oregon coastal fishermen could do nothing with Pacific whiting but toss it overboard; the fish deteriorated too quickly to be of value. Then scientists at the Coastal Oregon Marine Experiment Station in Astoria found an enzyme inhibitor for use in processing that preserves the fish's marketability. Oregon now has an $80-million-a-year Pacific whiting fishery.
