Why I became a chef: When I was 16 my dad took me to Le Francais for my birthday. (He had started taking me to French restaurants when I was 12 and got me to try escargots and foie gras.)

Of course I was absolutely overwhelmed and amazed (with Le Francais). I asked if I could go in the kitchen, and that was it, much to my father's chagrin, because he wanted me to become a doctor.

I think before that (experience) my impression of a kitchen was stereotypical chaos. This was the complete opposite. Everyone was clean and professional. It was a controlled atmosphere. But there was still something artistic going on.

It's very exciting to me to go back to the place where it all started.
