Jean-Marie Josselin, who started a chain of gourmet restaurants in Hawaii with an unsecured bank loan and the dream of doing his own thing, is not afraid of taking risks.

The 43-year-old native of France sold three highly successful restaurants in Hawaii to open two on the mainland. With his restaurant in Las Vegas a success, Josselin is rolling the dice that his new venture in San Diego will also come up a winner.

Influenced by friend and real estate broker, Bill Shrader, vice president of Burnham Real Estate Services of San Diego, Josselin opened 808 La Jolla in April.

Josselin said he began considering the idea a few years ago. But he didn't make the move until his Las Vegas eatery was up and running in the black.

"I met Jean-Marie in the mid-1990s," Shrader said....
