Ask California Clipper manager Steve Breda what kind of martinis he serves and he'll inform you he serves two kinds: gin and vodka.

Most people who frequent a hipster lounge like the Clipper expect a menu consisting of far more exotic concoctions.

But Breda and California Clipper co-owner Patrick McCoy don't intend to mine the specialty martini trend that peaked several years ago. Instead, Breda says, they plan to fine-tune the bar's menu, replacing trendy martinis with classics like the sidecar, grasshopper and sloe gin fizz that better suit the room.

The pace of cocktailing has shifted over the years, explains Breda. People today are more inclined to sip and savor their beverages. McCoy and Breda want to make sure they have a classic lounge in which to do it. That means preserving the California Clipper in all its retro swank splendor.

Named for Pan American Airways' California Clipper, an airship that flew from the mainland to Hawaii and the Far East during the late '30s and early '40s, the Clipper opened in 1999.

Reopened better describes it, since the building on the corner of California Avenue and Augusta Boulevard in Chicago's Humboldt Park reportedly housed a bar by that name for some 60 years.
