THE WAITERS AT THE CLUB LE Prive in Koreatown are all Korean, but they have the broad handsome faces and slicked-back pompadours, and even the gum-cracking streetside demeanors, of Brooklyn's best Italian boys of the 1950s. They also have the Brooklynese sobriquets: Ricky and "J" and Romeo. The waiters are deft at pouring a bottle of Crown Royal whiskey and at arranging a complex fruit platter--both of which are requisite at any table in Le Prive. They are also experts at negotiating their way across the crowded dance floor, and through the club's labyrinth of Mayan-themed passageways and the upstairs balconies where the tables cost up to $1,000 to reserve, and even past the knots of young Chinese men who all dress...
