Food scientists for Danisco (Langebrogade 1 DK-1001, Copenhagen, Denmark; Tel: +45-32 66 20 00, Fax: +45-32 66 21 75) have developed Grindsted Pectin Wave 212, a pectin ingredient for fiber enrichment. The product contains no less than 85% soluble fiber and yet develops very low viscosity to simplify its incorporation in a wide variety of foods, from beverages to bread or dairy products, the company said.
