Article Excerpt When it comes to meat, bones and bags are a bad combination. The former punctures the latter, and the resulting "leaker" lowers quality and accounts for some of transport's most galling losses.
Traditional bags for bone-in meat products, from pork ribs to half-legs of lamb, thwart bag punctures by bones via puncture-resistant patches. But patch bags, however well they work, aren't necessarily an aesthetic sought by consumers.
"As case-ready has evolved, one of the items not too well suited are these bone-in products, things like racks of ribs or ham shanks. The bone patches, or some of those other products designed for backroom cuts, really don't appeal to the consumer," says Michael Hiteshew, global segment manager of perishable foods for DuPont Packaging Solutions. "There's a need for a better-looking bag, something with more clarity and conformation."
