David Scott of Eugene was born and raised in Arizona, where a filling wrapped in a flour tortilla is called a "burro" instead of "burrito" as they are here.

"Before Mexican food really became stylish in the rest of the country, they were called burros in Arizona," he said. "And then I noticed that the name changed when we came to Oregon, that they call them burritos out here. Put an 'ito' on the end of it and it means 'small burro.' '

Scott considers David's Burros to be both his cooking specialty and his biggest cooking success, along with his mother's grilled lemon chicken. He provides recipes today both for the red chili filling for his burros and for the lemon, onion, thyme and garlic marinade for his mother's grilled chicken.
