How I got here: I came to Chicago from Mexico when I was 9 or 10 years old. I got my first job in a restaurant when I was 15 scooping ice cream for DB Kaplan's in Water Tower Place. I moved up to line cook to make sandwiches and stocks with the chef. Then I moved to Lloyd's and became a sous chef.

I worked at Carlucci's for 10 years. I was the sous chef for three years and head chef the rest of the time. I came to the Signature Room Grille in September.
