As 2003 comes to an end, I started thinking about what I'd learned or discovered this year. I thought I'd share some of that knowledge with you.

- I learned of a spice I'd never heard of nor tasted before: ground sumac. Dried and ground bright red sumac berries impart a lemony tang to meat and chicken. Sumac's as old as Roman history, which makes me a "Donny-come-lately" to this intriguing flavor. You can count on seeing more about this spice next year.

- I thought that pita bread pizzas baked on a stone were the best things I'd happened upon in the last dozen years, but I've found a new way to give pizza new zest.

On a whim, I picked up a package of lavash, a Middle-Eastern flatbread, at my local natural foods...
