A point of difference

Imported meat and poultry items allow a store to differentiate itself from the rest of the pack, especially in the wake of large consolidations affecting both the food manufacturing and retail industries. Such international products, from Italian prosciutto to German ham to Mexican chorizo, are often marketed as authentic or upscale and sold in the deli, gourmet, organic, or specialty butcher section of the store.

The commodity meat case, on the other hand, is a bit different. Most fresh red meat and poultry items are produced domestically by American farmers and ranchers. There are some exceptions, such as New Zealand or Australian lamb, which has been extensively marketed in the U.S., and highly marbled Japanese Kobe beef, which has been making a showing in supermarket chains such as Giant Eagle in the Eastern part of the nation.

International products seem to sell well--and command a higher price...
