Supermarket retailers with an eye on shifting demographics are turning to Hispanic-focused concepts and marketing efforts in increasing numbers. As a result, the supermarket meat department is in the position to overcome its status as "one of the last holdouts" in supermarket categories regularly shopped by Hispanic consumers, says Hispanic marketing expert Richard Velez.

Hispanic preference for neighborhood butcher shops over the supermarket meat case is often rooted in meat safety or food-safety issues in their home countries, says Velez. "USDA is not everywhere. In the home country, you bought meat from the butcher you trusted; you knew he had good meat."
