WHETHER you're looking for purpose as you stare at your redundancy cheque or have always fantasised about running your own restaurant, further education colleges and universities with a vocational bent are expanding their programmes to meet demands from would-be Nigellas and Jamies.

The Professional Cookery NVQ courses offered by Thames Valley University (TVU), for example, are particularly relevant for students who just want to learn more about cookery and professional food production. Students learn about food preparation techniques, ingredients and restaurant standard dishes. There is also a focus on the need for health and safety, with an emphasis on food hygiene. All ingredients and equipment are supplied, and classes run on weekday evenings and Saturday mornings.
